Cheese on parade!



I like cooking for somebody and imaging them eating. It is different from cooking for myself. 
We had a birthday party for my friend at our house last weekend.
She is a dancer and I am big fun of her dancing. She always dances with her heart.
She always says, "Age doesn't matter for dancing. I will continuing dancing until I am not able to." Her strong passion is reflected in her dancing and I can't take my eyes off when she dances.
She loves cheese so the menu is cheese on parade!

I refer to the recipe from "terrine book" that my friend made. 
I love this book. I can just enjoy looking at photos and reading the writing again and again.
The recipe from the book used karin but I replaced with apples. And sprinkled pink pepper for topping.


誰かの為に料理するのが好きです。
みんなが食べているところを想像して。
食べてくれる人がいると思うと料理にも気持ちが入ります。

先週末は家でいつもお世話になっている友人の誕生パーティーをしました。
彼女はダンサーなのですが、私は彼女のダンスの大ファンなのです。彼女のダンスはとても情熱的で、心に響きます。
彼女はいつも、ダンサーに年齢は関係ない、私は踊れなくなるまで踊るのだと言っていて、
そういう彼女のダンスに対する強い気持ちが表現にも現れていて、
彼女が踊っている時は目が離せません。

チーズ好きの彼女の為に、今回のメニューはチーズのオンパレード!


brieチーズとりんごのコンポート 
これは友人の手がけたテリーヌブックのレシピを参考にしたもの。とても素敵なレシピ本で、写真や文を見たり読んだりするだけでも楽しくて、何度も読み返しています。
本ではりんごではなくてかりんなのですが、りんごに変えて。
ペッパー好きの私はピンクペッパーを仕上げに挽いて...

この日はチーズ好きなバースデーガールの為にチーズオンパレードのメニューたちです。






Sweet potato and feta cheese patties
sweet potato, feta cheese, egg, flower, butter, salt, parsley, sour cream on top


さつまいもとフェタチーズのパティ
さつまいもを短冊切りにして小麦粉、卵、バター、フェタチーズ、塩、刻んだパセリ、溶かしたバターとよく混ぜてフライパンで焦げ目がつくまで焼く。仕上げにサワークリームをのせて。

potatoes, butter milk, butter, canned salted herring, dill, salt, black pepper, pink pepper


へリングとポテトのブランダード
ブランダードは本来は塩漬けした鱈を使うそうですが、
今回は簡単にオイルへリング缶を使ってみました。
ポテトをバターミルク、バターで柔らかくなるまで煮込み、ペースト状に潰し、へリングとディルを加える。塩と黒胡椒で味を調え、型に入れて焼き目がつくまで焼く。
仕上げにピンクペッパーをのせる。

butter, flour, butter milk, ricotta cheese, eggs, parsley, thyme, rosemary, salt, pepper, 
parmesan cheese, mushroom,zucchini

ズッキーニときのこのスフレ
ズッキーニとホワイトマッシュルームを細かく切り、バターで炒めて塩胡椒する。
弱火で鍋にバターを溶かし、小麦粉、バターミルクを入れて混ぜる。火を止めてリコッタチーズと卵の黄身を加えてよく混ぜる。刻んだローズマリー、タイム、パセリを入れて塩、胡椒で味を整える。ズッキーニとマッシュルームも加える。最後に白身をメレンゲにしてふんわりと混ぜ、型に入れて焼く。焼き目がついたら仕上げにパルメジャンチーズを加えて更に焼く。

Making Sushi x Art Book!

Sushi x Artの本を制作中。
大好きな写真家のMinoちゃんに写真を撮ってもらって、残すは編集のみ。。。!夏前にはお披露目出来ればと思っています。

写真は白いなり、黒いなり。
ビーツを使ったお寿司や丸い野菜の押し寿司などなど。
完成が楽しみです。

最近はばたばたして、あまりちゃんとご飯も作れず、味噌汁にご飯、みたいな質素な生活をしています。NYにはあまりコンビニもなく、遅くまでやっているデリもないので、どんなに忙しくても自分で作らなきゃ、となるわけですが、それはそれで良い事だなと思います。
料理をしている時は不思議と無心になれます。多分それも料理する事が好きな一つの理由です。

今日は友人の誕生パーティーを家で開くので、久しぶりに気合いを入れてご飯を作ります!

I cooked Beats sushi, circle vegetable oshi-zushi etc... I am very excited to release! 
It will be self published book.

Recently, I've been busy and I couldn't cook so much. Simply miso-soup and white rice. 
In Japan, there are a lot of convenience stores and you can buy bento box or sweets anytime. But NY doesn't have so many of them. It force me to cook and I think it is good. 
One of a reason I like cooking is that I can be blank brain ( or just thinking about cooking)  while I am cooking. One of relaxing time.

Ayurveda spaに行ってきました。


 最近自分の中で和食ブームが到来。ここ数年はタイやインドブームだったのですが、やはり日本人、行き着くところは和食なのです。豪華でなくていいのでおいしいお味噌汁とご飯を作りたい。
 ちなみにうちのキッチンテーブルはまさにちゃぶ台。床に正座して(ロバートがこれまた正座が上手いのです)食べるのですが、なんだか落ち着きます。やっぱりここも日本人。


 さて、話しは変わりますが、前から気にはなっていたものの行った事はなかったAyurveda spa。知人に紹介されて先日はじめて行ってきました。
 Ayurvedaは古代インド文明発祥の伝統医学で、体と心のバランスをとって、健康な心身を作るという予防医学の考えが基になっているそうです。
 今回伺ったのはパークスロープにあるWild LotusというAyurveda spaで、日本人の方がセラピストをされています。
 地下の薄暗く静かなお部屋に通され、まずはぬるま湯を飲みながらドーシャ診断をされます。人は3つのドーシャーVata(風)、Pitta(火)、Kapha (水)により構成されていて、そのバランスによって体質や気質が変わるのだそう。私も詳しくは知らないのですが、三本指で脈を測って、どの指に、どのような音や早さで心拍が伝わるかによって診断をされていました。
 私はVataとPitaが強く、Kaphaが少なめなんだそうで。やっぱりKaphaが少ないんだーと納得。
簡単に説明してしまうと、Vata(風)の要素が強い人の気質は心配性で感受性が強い、アーティストタイプ。Pitta(火)の要素が強い人はIntenseで短気、ビジネスマンタイプ。Kapha(水)の要素が強い人はやわらかく、マイペース、頑固な人が多いそうです。
 
 Kaphaの少ない私はパンなどのドライなものはあまり食べず、お米などのスティッキーなもの、そしてオイリーなものを取るようにするようにアドバイスをもらいました。

今回は油たらーのシロダーラは出来ず、フェイシャルマッサージと全身デトックスマッサージを受けました。フェイシャルが特にとっても良かった。むくみと疲れが取れてなんだか目が大きく開くようになった気が・・・

マッサージオイルもすべてオーナーさんの手作りで、その人のタイプによって使うオイルも変えるという拘り。

『あなたの心配性は心からくるものではなくて、気質ー体からくるものなので、何か心配になってもそう思って気楽に考えたほうがいいですよ』とアドバイスをもらいました。
なるほどー 
自分の生まれ持った体質や気質、自分自身を理解して自分の体と心と上手くコミュニケーションをとっていきたいものです。

高山なおみさんの本




NYに住む親しい友人が日本に帰る事になった。

彼女には本当にいつもお世話になっていて、彼女の感性や人柄にはとても影響を受けてきたので、もう側にいなくなってしまうのだと思うと本当に寂しく思う。でも彼女の事だから、日本で新たな素晴らしい道を切り開いていくんだろうな。なので寂しい気持ちを抑えて応援したい。

さて、そんなわけで日本へはそんなに本を持って帰れない、という事で何冊か本を頂いた。

 料理家の高山なおみさんの本(エッセイ集)もその中の一つで今読んでいる。『高山ふとんシネマ』と『日々ごはん』。疲れていても読める本 というか疲れたときにソファに寝転がってぼーっと読みたい本です。

『高山ふとんシネマ』の方は高山さんが見た映画や音楽などのお話が、それぞれのシーンに登場する食事や、高山さんがそれを見ながら食べた食事なんかと共に綴られ、『日々ご飯』には日常の出来事などがその日の献立とともに綴られている。

 どちらも生活やシーンに食事の様子が綴られているところが滲み出た生活感を感じ取られてなんだか読んでいて落ち着くのです。
 高山さんは日々の出来事や見たもの、聞いたものを味わって、かみ締めて、丁寧に人生を生きている方なんだなと思う。私も丁寧に生きたいなと思う。

 紙の消費という点では考えてしまうけど、やっぱり私は紙の本をぺらぺらとめくって読むほうが断然好きだ。電子ブックを買おうかなと思ったりもしたし、この先いつか買うかもしれないけど。写真集なんかもインターネットで同じ画像が見れるとしても書いたくなってしまう。またお気に入りを本棚に並べて、今日はどれを読もう、と迷うのも楽しい。

お節料理

A Happy New Year! 

年越しパーティーのために何品かお節を準備しました。




煮物の煮汁が残ったのでそれでアゲを煮てお稲荷さんに。








前日からたらを味噌につけておき、西京焼きを作りました。みそをかなりたっぷり使うのにつけ終った後の味噌はみんなどうしてるのかなという疑問。。生魚をつけてるから使うの躊躇するし 結局胸苦しく思いながらも捨ててしまったー

酢ごぼうのたたきも作りました。初めて作ったんだけど、個人的にはきんぴらごぼうのほうが断然好きで、結局翌日炒めて食べる始末に。






今年はちょっと贅沢に、蒸し栗入りのお赤飯も作りました。



皆様にとって素晴らしい一年になりますように。2013年もよろしくお願いします。

だいぶ前に金柑をかったのだけどいつの間にかしなしなになってしまったのでメープルシロップで煮詰めました。しなしな感も隠れたし生より食べやすかった。さらに柑橘でレモンのゼストも加えて。







本日はこんな手抜きランチ。
チーズの食べすぎを何とかしないと。。でもおいしいしね。。。
今年も残すところあと2日!

手作りがんもどきと押し寿司


がんもどきを作りました。

よく水切りした木綿豆腐を裏ごしして、すりおろした山芋、下茹でしたにんじん、牛蒡、出し殻昆布、椎茸、卵、塩、だし醤油(椎茸戻し汁、酒、かつおぶし、昆布、醤油で煮たもの)とよく混ぜ合わせて俵状にして揚げます。白ごま油で揚げたかったんだけど、手に入らなかったので紅花湯とごま油のミックスで。

最初作ったときは豆腐を裏ごししないで細かく潰しただけだったんだけど、やっぱり裏ごしした方が断然おいしい。

今回は揚げたてを生姜醤油で。残りは冷凍しておいて今度煮物にしようと思います。

今リトルプレスでお寿司のレシピ本を作ろうといろいろ試作中。
この押し寿司もその一つ。押し寿司の型は木曽に行った時に買った木曽檜のもの。(その後NYでも木曽檜の押し寿司型を見つけたんだけど)檜の香りってたまらなく落ち着く~

Tomato jam x biscuits



 I made tomato jam, remembering about the tomato jam sandwich that I had at Seersucker. I found this recipe online and it was great! It uses tomatoes, ginger, clove, chili, sugar, salt; a little bit spicy with a rich flavor.




 I baked biscuits just for this tomato jam. I am not so good at baking. I wish I could bake well like my husband, Robert. I found this recipe online as well. The recipe looked like it had too much salt, but I followed it anyway since it was the first time to bake biscuits. It was a mistake... too much salt...;( so sad. I guess it was a typo, they meant 1 teaspoon, instead of 1 tablespoon;(   I will try again next week..!

Indian curry with beans and cheese


We love Indian food. Tonight's dinner was Indian curry with beans and cheese.

Ingredients: pre-cooked masala, mixed beans, cilantro, safflower oil, butter, garam masala, turmeric, chipotle chilli powder, salt, cheese, water


I often cook "pre-cooked masala". It is used for base of Indian curry.
This recipe is from "From Mom with Love" by Pushpa Bhargava. This book was originally written by a mother who loves her children so much. She wanted her children to carry their traditional cooking to their future families. That's the reason she wrote her book.
This recipe book is amazing. I am very glad that I found this book.




Pre-cooked masala is pureed tomato and onion base, with many Indian spices. It lasts a couple weeks and it is a curry base so it is very convenient to keep in the refrigerator.





This lamp is the one I bought in Turkey when I traveled. I love this lamp so much. 







It is hand made by a Turkish artisan. It is beautiful work.







Real design never gets old. And because people love it deeply, they don't waste. 
I like the idea of making things with lots of love and enjoying them with love.

I wanna TACOS!


I was just very in the mood for tacos.
I made tortillas from scratch this time!








 Baja tacos: pan fried perch marinated with olive oil, cumin, coriander, chipotle chili pepper, lime juice, salt,
                   roasted tomato, fresh greens, fresh cilantro

Bean tacos: mixed beans steamed with cilantro, green chili, canned tomato, butter, chipotle chili pepper, salt, onion, garlic, olive oil, black pepper, cheese, rice, fresh greens, fresh cilantro








 Serve with fresh lime and sauce (mayonnaise, ketchup, hot chili)

Our wedding tree

 I made a wedding tree for our wedding.
