Cheese on parade!



I like cooking for somebody and imaging them eating. It is different from cooking for myself. 
We had a birthday party for my friend at our house last weekend.
She is a dancer and I am big fun of her dancing. She always dances with her heart.
She always says, "Age doesn't matter for dancing. I will continuing dancing until I am not able to." Her strong passion is reflected in her dancing and I can't take my eyes off when she dances.
She loves cheese so the menu is cheese on parade!

Brie and apple compote
I refer to the recipe from "terrine book" that my friend made. 
I love this book. I can just enjoy looking at photos and reading the writing again and again.
The recipe from the book used karin but I replaced with apples. And sprinkled pink pepper for topping.


誰かの為に料理するのが好きです。
みんなが食べているところを想像して。
食べてくれる人がいると思うと料理にも気持ちが入ります。

先週末は家でいつもお世話になっている友人の誕生パーティーをしました。
彼女はダンサーなのですが、私は彼女のダンスの大ファンなのです。彼女のダンスはとても情熱的で、心に響きます。
彼女はいつも、ダンサーに年齢は関係ない、私は踊れなくなるまで踊るのだと言っていて、
そういう彼女のダンスに対する強い気持ちが表現にも現れていて、
彼女が踊っている時は目が離せません。

チーズ好きの彼女の為に、今回のメニューはチーズのオンパレード!


brieチーズとりんごのコンポート 
これは友人の手がけたテリーヌブックのレシピを参考にしたもの。とても素敵なレシピ本で、写真や文を見たり読んだりするだけでも楽しくて、何度も読み返しています。
本ではりんごではなくてかりんなのですが、りんごに変えて。
ペッパー好きの私はピンクペッパーを仕上げに挽いて...

この日はチーズ好きなバースデーガールの為にチーズオンパレードのメニューたちです。






Sweet potato and feta cheese patties
sweet potato, feta cheese, egg, flower, butter, salt, parsley, sour cream on top


さつまいもとフェタチーズのパティ
さつまいもを短冊切りにして小麦粉、卵、バター、フェタチーズ、塩、刻んだパセリ、溶かしたバターとよく混ぜてフライパンで焦げ目がつくまで焼く。仕上げにサワークリームをのせて。

へリングとポテトのブランダード
ブランダードは本来は塩漬けした鱈を使うそうですが、
今回は簡単にオイルへリング缶を使ってみました。
ポテトをバターミルク、バターで柔らかくなるまで煮込み、ペースト状に潰し、へリングとディルを加える。塩と黒胡椒で味を調え、型に入れて焼き目がつくまで焼く。
仕上げにピンクペッパーをのせる。

ズッキーニときのこのスフレ
ズッキーニとホワイトマッシュルームを細かく切り、バターで炒めて塩胡椒する。
弱火で鍋にバターを溶かし、小麦粉、バターミルクを入れて混ぜる。火を止めてリコッタチーズと卵の黄身を加えてよく混ぜる。刻んだローズマリー、タイム、パセリを入れて塩、胡椒で味を整える。ズッキーニとマッシュルームも加える。最後に白身をメレンゲにしてふんわりと混ぜ、型に入れて焼く。焼き目がついたら仕上げにパルメジャンチーズを加えて更に焼く。

お節料理

A Happy New Year! 

年越しパーティーのために何品かお節を準備しました。




煮物の煮汁が残ったのでそれでアゲを煮てお稲荷さんに。








前日からたらを味噌につけておき、西京焼きを作りました。みそをかなりたっぷり使うのにつけ終った後の味噌はみんなどうしてるのかなという疑問。。生魚をつけてるから使うの躊躇するし 結局胸苦しく思いながらも捨ててしまったー

酢ごぼうのたたきも作りました。初めて作ったんだけど、個人的にはきんぴらごぼうのほうが断然好きで、結局翌日炒めて食べる始末に。






今年はちょっと贅沢に、蒸し栗入りのお赤飯も作りました。



皆様にとって素晴らしい一年になりますように。2013年もよろしくお願いします。

手作りがんもどきと押し寿司


がんもどきを作りました。

よく水切りした木綿豆腐を裏ごしして、すりおろした山芋、下茹でしたにんじん、牛蒡、出し殻昆布、椎茸、卵、塩、だし醤油(椎茸戻し汁、酒、かつおぶし、昆布、醤油で煮たもの)とよく混ぜ合わせて俵状にして揚げます。白ごま油で揚げたかったんだけど、手に入らなかったので紅花湯とごま油のミックスで。

最初作ったときは豆腐を裏ごししないで細かく潰しただけだったんだけど、やっぱり裏ごしした方が断然おいしい。

今回は揚げたてを生姜醤油で。残りは冷凍しておいて今度煮物にしようと思います。

今リトルプレスでお寿司のレシピ本を作ろうといろいろ試作中。
この押し寿司もその一つ。押し寿司の型は木曽に行った時に買った木曽檜のもの。(その後NYでも木曽檜の押し寿司型を見つけたんだけど)檜の香りってたまらなく落ち着く~

Tomato jam x biscuits



 I made tomato jam, remembering about the tomato jam sandwich that I had at Seersucker. I found this recipe online and it was great! It uses tomatoes, ginger, clove, chili, sugar, salt; a little bit spicy with a rich flavor.




 I baked biscuits just for this tomato jam. I am not so good at baking. I wish I could bake well like my husband, Robert. I found this recipe online as well. The recipe looked like it had too much salt, but I followed it anyway since it was the first time to bake biscuits. It was a mistake... too much salt...;( so sad. I guess it was a typo, they meant 1 teaspoon, instead of 1 tablespoon;(   I will try again next week..!

Indian curry with beans and cheese


We love Indian food. Tonight's dinner was Indian curry with beans and cheese.

Ingredients: pre-cooked masala, mixed beans, cilantro, safflower oil, butter, garam masala, turmeric, chipotle chilli powder, salt, cheese, water


I often cook "pre-cooked masala". It is used for base of Indian curry.
This recipe is from "From Mom with Love" by Pushpa Bhargava. This book was originally written by a mother who loves her children so much. She wanted her children to carry their traditional cooking to their future families. That's the reason she wrote her book.
This recipe book is amazing. I am very glad that I found this book.




Pre-cooked masala is pureed tomato and onion base, with many Indian spices. It lasts a couple weeks and it is a curry base so it is very convenient to keep in the refrigerator.





This lamp is the one I bought in Turkey when I traveled. I love this lamp so much. 







It is hand made by a Turkish artisan. It is beautiful work.







Real design never gets old. And because people love it deeply, they don't waste. 
I like the idea of making things with lots of love and enjoying them with love.

Homemade Miso



Finally, my homemade red beans miso is ready to eat!  

2月に漬け始めた味噌がついに完成!小豆と米麹のお味噌です。













早速朝ごはんに甘辛味噌ダレとお味噌汁を作って頂きました。
小豆だからか、ほんのり甘くておいしかった。残りはもう少し漬けておきます。
味がどんな風に変わるのか楽しみ。

ホームメイドカレーを美濃焼の器でいただく




 日本からNYに戻ってきたばかりなので、日本っぽいものが食べたくなり、日本のカレーを作ろうと思い立った。
 カレーのオリジンは日本ではないけど、カレーはたくさんの国でそれぞれのレシピがあって面白いな、と思う。インドカレーやタイカレー、マレーシアンカレーなども作ってみたけど、同じカレーとは言ってもスパイスもスープストックも違う、実に奥深いものだ。
 でも日本のカレーってなんだろうと考えてみると、市販のルーを使うカレーがすぐに思い浮かぶ。なんだかそれも悲しいような。市販のルーは添加物が入っているものが多いので、ここはルーから作ってみよう。
 前に何度かルーから作ってみたものの、イマイチ味が決まらなかったのだけど、今回はやっといい感じに出来た。そして我が家では肉を食べないので、野菜だけで何度か作ってみたけど、それもまた何か足りない気がしたので今回はツナ入りに。

器は日本に帰ったときに友人ご家族から頂いた地元美濃焼の器で。(守山窯 水野豊滋さん作)自然を感じる作品ですごく好き。



●スープストックをブロッコリーの芯の部分、人参、玉ねぎ、りんごの皮、生姜丸々1個(皮ごと5ミリくらいにスライスして)、にんにく、ねぎの青い部分でとる。
●人参、玉ねぎ、りんごはミキサーでピュレー状にする。
●じゃがいも(皮付き)、人参、茄子は一口大に切り、赤唐辛子、生姜、にんにくをみじん切りにしておく。
●ルーを作る。バタースティック1本半(170グラムくらい)をフライパンで溶かし、小麦粉を入れて混ぜる。さらにカレーパウダー、クミン、コリアンダー、ターメリックパウダー、カイエンペッパー、ガラムマサラ、塩、ブラックペッパー、アサフェティダパウダーを加えてよく混ぜ、ペースト状にする。
●切って置いた具をサラダ油で軽く塩して炒め、スープストックの入っている鍋に移して煮る。具が柔らかくなってきたらツナ、ピュレー、ベイリーフを加え、さらに煮る。
●ルーを加えて煮込み、最後にレモンを絞り、味を調える。




I just got back to NY from Japan and miss Japanese food. So I thought of cooking "Japanese curry".
Curry's origin isn't Japan but as you know many countries create their own curry recipe and the characteristics of each are very fascinating for me.
If I think about what Japanese curry is, the answer is curry that uses curry roux, available in shops (which are very common in Japan). A lot of them use artificial ingredients or MSG. Why can't we cook from scratch? I didn't have an answer, so I tried. Actually, I tried to cook from scratch in the past, but I always felt something was missing. But this time, I think it was good - finally! We don't eat meat, so I added tuna instead.

I ate it in a "Mino-yaki" bowl that was gifted from a friend from my hometown Gifu, which is known for pottery. The artist is Toyoshige Mizuno from Moriyama-gama. I like its natural, earthy feeling very much.


Soup stock: stem of broccoli, carrot, onion, ginger, skin of apple, leek, garlic, bay leaves
Cut potatoes, carrots, eggplant, ginger, garlic and stir fry then steam in the soup stock. Add a can of tuna to the soup.
Make puree of carrot, onion, apple and put in the soup stock and steam it.
Make curry roux: 1.5 sticks of butter melted, flour, curry powder, cumin, coriander, turmeric, cayenne pepper, garam masala, salt, black pepper, asafoetida.  Mix well until it becomes paste then add it to the soup and steam about 10 min. Add lemon juice in the end to taste.
